台灣的素食產業發展完善,提供了素食者方便的飲食環境,但對台灣素食者而言,赴海外自助旅行時,不同國家文化背景對素食定義有所差異,在異國情境下,台灣素食者會透過怎樣的調適策略以克服此問題? 本研究目的為探討素食者在海外自助旅遊情境下的飲食問題與調適策略,研究對象為具有海外自助旅遊經驗,且連續素食一年以上者,以目的性抽樣和滾雪球抽樣法募集研究對象,觀察一組日本東京素食自助旅行團,並深度訪談20位海外自助旅遊經驗之素食者,採用主題分析來整理與歸納海外素食自助旅遊的飲食對策。
研究分發現受訪者在海外自助旅遊面臨三種飲食阻礙情境:(一)社會文化情境:素食認知相異、烹調口味不同;(二)人際互動情境:同行者的協調度、語言溝通;(三)其他情境:網路資訊的不準確性、飲食經費的掌控。而在異國情境下所使用的飲食調適策略,則參考Lazarus&Folkman (1984)所提出心理壓力與調適理論,並根據受訪者的情境及因應對策,調整歸納分為三類型共6種策略:(一) 問題取向:簡單行事、主動詢問;(二) 心理取向:隨遇而安、轉移旅遊重心;(三) 人際取向:與友伴協調飲食問題、尋求當地居民協助。
The vegetarian industry in Taiwan is booming, providing a convenient dietary environment for the vegetarians. Due to the definition of vegetarianism in different cultural varies, the purpose of this study is to explore the dietary coping strategies of Taiwanese vegetarians in the context of independent travel overseas. A total of 20 Taiwanese vegetarians who have been a vegetarian for more than one year and had independent travel overseas experiences were recruited by the purposeful sampling and snowball sampling. Semi-structured in-depth interviews and observation participation for a group of vegetarian independent trip in Tokyo, Japan was conducted. Results of thematic analysis showed that three dietary constraints contexts during the trip: (1) Social cultural context: Different vegetarian definition and Cooking tastes; (2) Interpersonal interaction context: Coordination of travel companions and Communication issues; (3) Structural context: Inaccuracy of on-line information and Meal budget control. For the dietary coping strategies overseas, based on the psychological stress and coping theory proposed by Lazarus and Folkman (1984), three types of coping strategies were found: (1) Problem orientation: Simplified the process and Direct inquiry; (2) Psychological orientation: Take things as they come and Emphasize on other travel motivation; (3) Interpersonal orientation: Coordinate dietary issues with travel companions and Seek for help from the locals.
